Summer Food Favorites: Summer Orzo Pasta Salad

Summer foods are some of my favorite meals. Finding a good summertime meal that brings in a light, freshness on these hot days is the perfect meal.

This week’s Summer Food Favorites meal is Summer Orzo Pasta Salad from A Cedar Spoon. We loved this meal this summer and I know that you will too!

What You Need For the Salad: (Get Your Ingredients)

  • 8 ounces orzo pasta cooked according to package
  • 1/2 English cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1 – 15-ounce can garbanzo beans  drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 1/2 small red onion, chopped {about 2/3 cup}
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley, chopped

She had a red wine vinaigrette recipe as well but I chose to purchase one at the store. I would love to hear feedback on how it tastes with the red wine vinaigrette.

How to Make It:

This recipe takes about thirty minutes total to make. Cook the orzo according to the package. I put it in the fridge to get it to cool quickly. In large mixing bowl combine the cucumber, feta cheese, garbanzo beans, tomatoes, red onion and gently stir to combine. Add the orzo pasta to the vegetables and mix well. Toss it in a little of the red wine vinaigrette. Sprinkle the basil, mint, and parsley over the salad and gently toss. Add more vinaigrette as needed.

    I LOVE orzo!! Summer is coming to a close so I love anything and everything that makes it feel like I can stretch it a little longer, gonna have to try this recipe.
